thankful thursday

My mom sent me a very early birthday gift, and even though I knew she was sending it, it was still such a nice surprise to get something in the mail.

If you saw my March Favorites post yesterday, you know I love the bath & body works clementine candle. I got this candle at Home Goods for like $6 on clearance after Christmas, and it smells amazing.

I've named this pasta, "the best pasta ever". One night we had nothing to eat, so my husband just used what we had and literally came up with the most delicious pasta I've ever had! I've been bugging him for a recipe, but he claims it's just using things in the pantry!

I get embarrassingly excited when Rita's has the pear flavor italian ice, because it's literally the best thing in the world. I want to buy it by the quart whenever they have it because it's that good!

On Monday I listened in on a google chat with two of my favorite authors Megan McCafferty & Sarah Dessen. I dream of being a writer (one day), so it was a lot of fun to "chat" with them for a bit.

So whether your week has been good or bad, I hope this post will remind you to stay grateful :)


March Favorites (2014)

my favorite color for spring

I've always been a huge fan of navy-- next to black it's probably my favorite color. Other than that I've never been a big blue fan you could say...until this year! I've been loving light/baby blues!

I think it all started with Essie find me an oasis nail polish. I've mentioned this a few times already, but I wasn't too impressed with the quality of the nail polish-- it chips so quickly! Because I love the color so much I keep wearing it though! Another light blue I love is L'Oreal's pistachio dream, sadly it was limited edition last year. Doing a bit of browsing Deborah Lippmann's blue orchid looks like another gorgeous light blue I need in my collection.

I can't say I own any blue eyeshadows but this cream shadow by Benefit (blue my mind), looks like it would be a gorgeous way to brighten the eye area while adding a tiny bit of color.

I've been lusting over just about every single Kate Spade bag & the grace blue color is beautiful & so perfect for spring and summer!

I almost always prefer all black tennis shoes, but of course, I saw these baby blue shoes in the store and was immediately drawn to them! They're the Nike Women's Free 5.0+ running shoe & they might be on the top of my birthday wish list! (ps. these are less bright in person!)

Lastly, would be these gorgeous Bauble Bar earrings I came across on pinterest! Obviously I can't get over the color, but I love how glamourous they look for only $38!

What light blue things am I missing out on? Are you loving this color as much as I am?

Buffalo Chicken Bites

I finally have another recipe to share today! As of now I'm right about on track with one new recipe a month for my 15 in 2014.

I've had wonton shells in my freezer for a couple of weeks now because I was planning to make taco cupcakes, but lately I haven't been loving ground turkey/beef, so I haven't been in the mood for a dish with those ingredients. When I came across these buffalo chicken cupcakes on The Girl Who Ate Everything, I knew I had to make them!

I love anything that is individual or bite size- I think it makes it so much easier to serve, save, or share.

This recipe requires just a few ingredients:

8oz cream cheese (softened)
3/4 cup shredded cheddar cheese
1/2 cup ranch dressing
1/2 cup hot sauce
1 1/2 cup cooked shredded chicken
24 won ton wrappers*
extra shredded cheese for topping
blue cheese is optional

Directions: Pre-heat oven to 375 degrees; lightly spray pan with cooking spray; mix together the first four ingredients until creamy; add in the chicken; place one wonton shell in the bottom of the cupcake pan; add about a tablespoon of filling; top with another wonton shell; another layer of filling; top with cheese; bake for about 18 minutes. I followed the directions almost exactly. I guessed when it came to how much hot sauce to use & I went overboard with how much cheese I used for the topping! They were a tad greasy on the bottom, and I'm thinking it might have been from the cheese so I would recommend keeping the cheese light.

Overall, I'd say these were a success! The flavors are wonderful, it was a really easy recipe to throw together quickly, and it would be great for entertaining. The wonton wrappers were really easy to work with and provide a great texture and flavor.

In the future I would probably opt to use a mini cupcake pan to make a smaller version. They are on the heavy side because there's so much filling in each one & it would provide an overall crisper texture.

If you're a buffalo chicken fan definitely give these a try!

Five on Friday (march edition)

It's been a while since I linked up for a Five on Friday so I thought I would share some of my highlights from last weekend and this week.
1. Despite how it's going to appear in this post, I really have done a good job cutting back on desserts/sweets but ice cream is my weakness! Vanilla ice cream with heath &/or peanut butter cups is the way to go!



If you've been following my blog for the past couple of months you'll know I've been finishing the Harry Potter series. I read books 1-4 a little bit spaced out and then ended up reading 5, 6, and 7 pretty much back to back-- finishing the last two books in like two days! I know most people read through these books years ago when they first came out, and I'm way late with my obsession but I wanted to share my thoughts of the final book! My husband has never read them so he could not understand my sadness when I finished the final book.


Style Crush (miranda kerr)

Spring is on the way and I'm ready to come out of my cocoon of yoga pants, oversized sweatshirts, and uggs. I absolutely love Miranda Kerr and not only is she gorgeous, I love pretty much anything I've ever seen her wear! She would look gorgeous in just about anything, but I'm especially a fan of her street style. I've shared some of my favorite outfits below...


Homestyle Stuffed Peppers

I had planned on doing a Five on Friday post today but I finished reading the sixth Harry Potter and was completely SHOCKED. I knew what happened was going to happen, I just had no idea it happened in that book! In short, I'm too wrapped up in Harry Potter land in my mind to formulate a post for today so I thought I would share a stuffed pepper recipe I was planning to post next week.


Fashion Favorites (2014 Oscars)

There's something so fun about watching red carpet events & award shows-- especially the Oscars! I will admit that the red carpet coverage was pretty painful to watch at times. I wasn't wowed by too many of the looks last night, but it was still entertaining to watch!
Here are a few of my favorite looks from the night:

Kate Hudson in Atelier Versace
I didn't even really notice Kate on the red carpet-- however when she presented it easily became my favorite dress of the night. I think it had something to do with the fact that she lost the cape/shaw when she was on stage-- not to mention she looked completely flawless!
